In the old days, people in Astashovo always enjoyed eating well and treating guests to delicious meals! Now, we offer breakfasts, lunches, and dinners, taking into account all the dietary needs and preferences of our guests.

We follow the “zero kilometre” principle of using local products as much as possible. Curd cheese and crème fraîche are made by the chef from his own cows’ milk. Farm-style cheese is produced at the closest farm to the Terem. Meat, poultry, and wild game are supplied by locals. Mushrooms and berries are gathered from the surrounding forests and garden-fresh vegetables are prepared. We dry the herbs and ferment the Ivan-chai tea ourselves.

Last, but not least, the coffee—no, it doesn’t grow beside our pumpkins—but we have the best coffee machine in the north of the Kostroma region. Espresso con panna with fresh country-style whipped cream is divine!

 

Breakfast

Breakfast is included in the room rate for guests in the Terem and Wing (if you are staying in one of the cottages, there is an additional charge for breakfast). For breakfast, we serve homemade tvorog (curd cheese) and smetana (crème fraîche), blinis (thin pancakes) or syrniki (fried curd cheese fritters), eggs and cereals, as well as our own jam and local honey.

Lunches and dinners are offered in the form of fixed sets from our chefs (without the possibility of ordering à la carte).

Sozonych and Perfilyev

The Sozonych set is more simple, a variation on the classic Russian peasant table. This set is named in honour of Martyan Sozontovich Sazonov, who built the Terem.

The Perfilyev set is elegant cuisine, classic international dishes that have been adapted to Russian traditions and feature the best local products. This set is named in memory of an ancient family of boyars from Galich, whose descendants owned the Vvedenskoye estate nearby.

We ask that you order food in advance, at least the evening before. If you have a special diet or dietary restrictions, please let us know and the chef will prepare something suitable for you.

We go beyond the usual three meals a day

If, having arrived at the Terem, you decide to go on an excursion or an expedition, we will provide you with snacks and picnics. And we will even organize fish soup over the fire by a forest river!

If you are celebrating your special day with us, we will prepare special treats and set a festive table in the Terem or outside.

Astashovo’s brand сhef – Marianna Orlinkova

Prior to starting as our brand chef, Marianna Orlinkova had a splendid career as a journalist  and a contributor to The Gastronome magazine (published in Russian). Besides this, she gave master-classes and created menus for several new restaurants and cafés both in Russia and abroad. This experience helped her a lot in her new role at Astashovo because this special place calls for a special cuisine.

On the one hand, the cuisine should be authentically Russian: with the nearby woods, the rivers, and the lakes surrounding the Terem, and the traditional Russian oven inside, we simply can’t have it any other way! On the other hand, our food has to be modern, intriguing, and atmospheric so that guests who come from afar don’t just take home memories of the architecture and excursions, but also of every breakfast, lunch, and dinner they had with us.

Under Marianna’s supervision, old cooking methods meet the latest contemporary techniques. So you might be served green schi (cabbage soup) slow-cooked in the Russian oven topped with a sous vide egg. Or we can mix jalapeños with the Russian-only sort of apples called Antonovka, a bit of local honey, and home-grown thyme in a delicious sauce for meat.

We are very focused on local produce: cheeses from the nearest towns, bread from the village bakery, lake fish both cooked and smoked, game from the forests, and much more. As for the dairy products – they are made exclusively for the Terem.

“When the fresh ingredients arrive at the Terem directly, the result depends only on us,” says Marianna, “and we won’t disappoint you.”
